It’s January, we’ve made it through the holidays but it’s not quite time for prep I, still eating to grow but determined to keep my shape! Prep is just around the corner. One of my winter meals that I can easily make ahead and freeze is my extra lean meatloaf . It’s one full meal , keeps well and doesn’t have to be as plain as my prep hamburger . :-). Try it and tell me what you think.
INGREDIENTS : -Two pounds 96% ground beef – one packet mrs dash salt free taco seasoning – 3 Tbsp Worcester sauce – 1 cup puréed peppers and onions – 1/2 tsp each of black pepper , onion powder , and garlic powder – 1/2 to 1 cup egg whites – 1/2 cup almond flour – 1/4 cup NSA ketchup
Combine everything in a bowl and then portion into 6 small tin bread pans. I like to top each loaf with a mixture of the ketchup and truvia . They can be baked in the oven at 375 for about 30 minutes . Keep them covered to avoid them drying out. Easy meal created and can be kept in freezer much better than other prepped meals!
